Entomatadas;//Adjective, En=in / tomat= from the word tomato /adas adjective termination that denotes action,”adas”
I would say that the closest translation of the word “entomatadas” or “entomatado” would be “smothered in tomato”.

These Entomatadas are the mellow cousins of the Enchiladas. They have the same concept and construction, rolled tortillas filled with infinite possibilities and covered with a sauce made with dry chiles.  The sauce used in entomatadas is made with red tomatoes, as its name suggests. Roma, or Tomboys tomatoes, or jitomate “bola” in Spanish is usually the tomatoes of choice when making this sauce, but certainly any red round meaty and juicy tomatoes, along with mild herbs and spices will work.

The basic Entomatada sauce is very mellow and showcases the best in tomatoes. In this version of mine, I rock it out a little bit by adding a single serrano, that mimics the black pepper and adds deep of flavor to the sauce. The sauce consist of boiled tomatoes, that are skinned, blended, and then sautéed with onion, garlic and fresh epazote or mint. Then its pureed for a second time to produce the most velvety and creamy tomatoey sauce. The creamy sauce contains no dairy however, which makes the sauce light and fresh. Also on the virtue of looking for a healthier, lighter version of the classic way to make entomatadas which calls for frying the tortillas, I warmed up the corn tortillas and I drizzled them with a bit of a delicious green… a grassy extra virgin olive oil! This step not only adds another layer of flavor, but also prevents soggy tortillas when the salsa is added.

These Entomatadas of mine are filled with sautéed zucchinis, onions, sweet corn, and goat cheese. Once I roll them up, they are smothered with the piping hot tomato sauce which warms them through. These Entomatadas are best eaten warm almost tepid temperature.
Pouring the sauce separately when making any kind of enchilada is my favorite way to make them; It avoids enchilada uni-blocks. Best of all, by using this technique on these Entomatadas, is that it makes them BAKE-FREE!!! keeping you and your house odor free when you have closed the windows to run the A/C. If you don’t understand how that works, then come further South.

Entomatadas are great for entertaining. I usually have them rolled up and when its time to serve them. I pour the piping hot tomato sauce all over, drizzle of Mexican crema or in this case I use a diluted Greek yogurt and sprinkle of queso fresco to keep them on the lighter side. Take them to the table and serve on a bed of shredded fresh lettuce and avocado wedges. I’m telling you, these Zucchini Goat Cheese Entomatadas scream Summer out loud! Whether its a midweek dinner or a potluck this recipe, its a must try! I know you will like them as much as we do!…

Ceviche de Pulpo-Octopus Ceviche

Octopus, the smartest, flexible and unique looking creature of the bottom of the sea. Eight arms, purple skin, side eyes, camouflage expert and a bag of attitude that will ink any snoozy neighbour. Why is this mollusk so intimidating? texture?, tentacles? I think Octopus are phenomenal, lots of personality and intelligent creatures.
Please, Do not judge by appearances this invertebrate is so delicious!. The meat is extra white, when is cooked properly, the texture is tender and mildly fishy, almost sweet. If you are lucky enough to get a fresh octopus you will taste the freshness of the sea water. You will have to tenderize the hell out of it before cooking,  like people from the Mediterranean smash their octopus against beautiful sea rocks right after being caught, or massage them until their arms are floppy and relaxed. But if you buy it previously frozen, from a good Sea food source half of the work is done for you and it saves you from doing the villain job.

 

If you follow my simple recipe instructions your Octupus will be tender, and flavorful, ready for ceviche, or just a simple drizzle of Extra Virgin Olive oil sea salt, lemon, smokey paprika and you have “Pulpo a la Gallega”. But, today, for me on a Summer day, Ceviche is my dish of choice. Trust me on this one.

I chose slightly different vegetables than the commun ceviche, like Cherry and Sun Gold tomatoes, which balance the acidity of the traditional ceviche adding a sweet balance. Also instead of red onions which for me are too strong and can overwhelm the delicate Octupus flavor, I chose shallots, they have a milder, onion and garlic profile that complements the Octupus. A good punch of heat with sharp and bright Serranos thinly sliced, that tickle your tong with out setting it on fire. Fresh cilantro, Mint and seedless cucumbers which add a lot of crunch and freshness to the dish.

Ceviche de Pulpo-Octopus Ceviche

Serves 2 hungry sailors or 4 mermaids…

2 Medium Octopus, I used previously frozen from …*
3/4 cup Cherry tomatoes cut in halves
3/4 cup Sun Gold tomatoes cut in halves
1/2 English Cucumber, small diced
2 Shallots thinly sliced
1/4 cup chopped cilantro
1-2 Sprigs of Mint just the leaves torned.
1 Serrano thinly sliced
1 Habbanero thinly siced optional
3 Juicy limes = 1/3 cup fresh lime juice approx.
1 lemon, the juice and the zest
1 glug Extra Virgin Olive Oil
Sea salt
Fresh cracked black pepper to taste, optional

1-2 Avocado Hass
Corn Tostadas, or crackers…
Extra lime for wedges
Cholula, Valentina, Hiuichol or Tabasco hot Sauce

Preparation Method:

1.Fill a large pot with at least 1.5 Gallons of water. Add 1 tablespoon sea salt and 1 large bay leaf. Bring to a boil. Once Water is boiling place the two octopus into the pot and lower the heat to low simmer. Cover pot with a lid and cook for 25-35 minutes.
Cooking times:
Usually this medium-small octopus cook very fast and they are tender. If you decide to use a bigger Octopus, increase the cooking time at least for 1 hr. and 30minutes, depending on the size.
How to tell when is cooked?,Use a fork and prick the wides part of the leg. or in between the leg and head if it feels tender and inserts with no trouble, octopus is done! 2. Meantime your octopus is cooling off, Chop all your vegetables, do your prep.

3. Once your octopus has cooled down slice each arm into 1/4 inch to 1/4 inch slices, discard the center and slice the head like if you where slicing a calamari, or into dice, what ever you prefer. Place into a plater and squeeze the lime juice, add salt and olive oil.

4. Add All the chopper Vegetables, Toss well and live it rest for 15-20 minutes. Smash 1-2 Avocados season with a bit of salt an lime juice. This will be the glue when you built your tostada.

Sweet Corn Crab Cakes with Saffron Aioli

This recipe has a long name but short preparation. Crab was never on Ian’s or my menu when growing up, but we really enjoy seafood: Mussels, Oysters, Razor Clams, Lobstah’, shrimp, fish… we love seafood the same way we love all food we sea.

So I decided to give it a shot, and make some crab cakes. I always liked how Seafood is prepared in Spain, simple, fresh but there is always an element of kick. Either from the freshest olive oil, a pinch of paprika, garlic, or a simple side of pimientos del padron. There’s always that good unexpected accent.

With this in mind I create today’s recipe  which combines sweet corn, orange zest, green onion action and sweet Louisiana crab with a delicious creamy saffron aioli with a garlic kick.

The first time I made these crab cakes we just fell in love with their flavor. These subtle flavors are a match made in heaven with the sweet crab. I could go on and on about them, but I think the photos will do the talking…Shhh, They taste even better than they look…
Crispy panko bread crumbs surround the outside of this cakes and a tender flaky and moist inside the crab just sings. The sweet corn kernels add great texture and sweetness. They are serve warm with a squeeze of lemon and the bright creamy saffron-garlic aioli on the side…mmmm, seriously good.

The recipe makes about 10 crab cakes if you use a standard ice cream scoop to portion them. They can also be made with a smaller size scoop and make bite size appetizers, Small to bigger crowds will love them.

If you are in a crabby mode, please consider this recipe as one of your top contenders.

Peperoncini Shrimp Ceviche Stuffed Avocados

Serves 4 to 6 with a bit of left over to refill the avocado halves.

2-3 Medium Avocados Hass is the preferable variety from Mexico (check the sticker!)
1 pound small medium shrimp peeled, deveined and cooked.
1 small tomato small diced
½ english cucumber small diced
1 small purple onion slivered
1 cup fresh pineapple small diced
8-10 pieces of Peperoncinis sliced.
¼ cup parsley finely chopped
2 glugs or 3 round drizzles of ExtraVirgin Olive Oil
1 lime juice
1 small orange, the juice and the zest
2 tablespoons of the peperoncini brine
¼ teaspoon garlic powder
¼ teaspoon celery salt
2-3 good cranks of fresh Black pepper
Pink Himalayan salt to your taste

Preparation:

1.In a medium size bowl combine all the chopped vegetables, shrimp, and the sliced peperoncinis. Add the lime juice, the orange zest and juice, 2 tablespoons of the peperoncinies brine, extra virgin olive oil, garlic powder, celery salt, Black pepper and one or two pinches of Pink Himalayan salt to taste. Toss throughly, cover, refrigerate and let marinate for at least 30 minutes.

2.When ready to serve, cut Avocados in half length-wise, remove pit, and slice a sliver from the backside of each half to flatten the rounded side and make them stable on the plate. With a paring knife carefully cut the interior of the avocado into a grid. This will help to make it easier to eat.

Creamy Basil-Zucchini Noodle Soup

Welcome Spring! and its amazing crazy weather, hehehe… here in Austin, Tx it’s rainy, cloudy and around 60 degrees that feels like 50 degrees. So I think a vegetable noodle soup, with a bright green hue, light, creamy and bright will lift up any cloudy weather… If you live in a part of the world where the weather feels accordingly with the Spring season, hey! this Creamy Basil-Zucchini Noodle Soup it’s also for you since it can be served warm or cold.

Describing this soup is a dreamy pleasure, it is creamy, fragrant, gluten-free, vegan, vegetarian, green, calorie friendly and easy to make. The basil, ginger,  and coconut give this soup an aromatic spring flare. The raw zucchini noodles add bite and texture to the soup. For me, it always has been interesting to enhance one flavor by combining different cooking variations of it. Raw, steamed, roasted, sautéed, two or three variations in one dish with the same ingredient. I believe that by maximizing one subtle ingredient like zucchini you can achieve maximum dept of flavor, textures, temperatures and add lots of character to the dish by focusing on “the” one ingredient.

Six ingredients joining one pot, and the fun task of making zucchini noodles. By the way, have you made Zucchini noodles before? It is awesome. This little apparatus called the vegetable spiralizer it is the bomb!. As you know, I’m not very fond of unitaskers in the kitchen, the only uni-tasker gadget I owned and loved was the Julienne peeler, until now. (which by the way you can use if you do not own a spiralizer) This vegetable spiralizer belongs into the FUN category, it transforms any meaty root vegetable or fruit into the most beautiful curly noodles. I’ve used, zucchini, carrots, beets, potatoes, sweet potatoes, butternut squash, cucumbers, rutabagas, green papaya, apples, pears, uff! you name it. It’s really easy to use and clean up. If you have heard of it, yes it is awesome! (No, I’m not getting paid to say this, what you are reading it is my honest opinion, in fact, I did not even buy this beautiful red spiralizer ha! It was a Christmas present from my friend Andrea…Thank you, Drea! I love it! Hehehe.)

Let’s cook! for the recipe, you will need…

Creamy Basil-Zucchini Noodle Soup

Serves 4

2 lbs. zucchini.  I combined half dark green zucchini, half Mexican calabazita aka zucchini. Use what is best available.
1 -16 oz. can organic coconut cream unsweetened
1/2 small onion
2 garlic clove
6 large, fresh basil leaves
½ teaspoon grated fresh ginger
1/2 teaspoon Lemon Zest
1  teaspoon kosher salt
4-6 Cranks of fresh ground Black Pepper

Preparation:

1. Reserve ½ of a large green zucchini for the raw zucchini noodles. Cut the rest of the zucchini into cubes.
2. Make the zucchini curls following the directions of your spiralizer, or use a Julienne peeler. Set the curls aside.
3. In a medium-size pot, add the zucchini cubes and the rest of the ingredients. Cover and bring to a slow simmer, cook for 20 minutes until the zucchini is fork tender but not mushy.
4. With an immersion blender, a blender or food processor, puree until smooth. At this point add a bit of water, or vegetable stock to adjust the soup to your desired thickness. Keep soup warm, and serve a couple of ladles into each bowl, add a handful of the raw zucchini noodles on top. Drizzle a little extra virgin olive oil, sea salt, and fresh black pepper. Enjoy!

Note: You can add little tofu squares, corn kernels, queso panela or mozzarella little squares if you want to make it into a complete lunch or dinner… This soup makes for a fabulous beginning of a meal, for lunch or if you dare for brunch…put an egg on it!

Spinach Ambrosia Salad with Dijon-honey-grapefruit vinaigrette

Semantically Ambrosia is a powerful word, the food or drink of the immortals, Greek goodess, sweet luscious juicy fruits, sweet honey smells, something that will bring  youth, pleasure, and health. In my crazy fantasy food world I imagine Homer, Penelope, Aphrodite, and Sappho and their ambrosia offerings of sweet and incredible nectars.  But the enchanted elixir got shattered when I Googled “ambrosia salad” and the record sounded broken. To my surprise his ambrosia salad it is an abominable concoction from the 50’s. Where all the Greek Gods must of been under the marshmallow influence, along with cans of syrupy fruits like cherries red no.5, pineapple chunks of yellow no.5 undistinguished cubes of fruit matter, bright green grapes and that fluffy component all tied up into a sweet coma. That’s what I call fulminating love…(Pepé Le Pew style hehhee)

Being lost in translation and trying to rescue the origins of the word,  this salad came to my mind. Lately I’ve been seeing a lot of “no wimpy salads” and a lot of encouragement to try and thrive while you feed not only your body, but the enticing act of eating consciously present and awake.

Althoug, I can not promise all of this matters in just one salad, I will assure you that this is not a wimpy one. In fact it does have the Ambrosia elements, fruits, smells textures, sweet, salty, acidic, juicy, creamy, crunchy all the components that make a salad a memorable meal, and the kind of salad you will crave the next day and perhaps the next weekend too. Spinach, strawberries, avocado, grapefruit segments, cucumbers, salty, creamy feta cheese, and crunchy nutty and meaty walnuts, all carefully combined and drizzled with a simple three ingredient Dijon-honey -grapefruit juice vinaigrette.  Needless to say the salad is healthy, energetic, nutritious, beautiful  and delicious.

Beans are the perfect food to cook during this seasonal transition. You know, those days when the weather shows a great deal of indecisiveness . Cold-warm-windy-rain-sunny all in one week. What to cook? Beans. Whether you add them to vegetable soups, tacos or salads they are always there for you as a quick route to make great meals. The trick to it is a little simple plan, a slow cooker, and patience (my little grasshopper).
Beans don’t like to be rushed. They like to soak over night,( preferably) and they like to cook at a steady low, low simmer almost like one bubble per 3 seconds. They like to be cooked in plenty of water lightly seasoned. Usually a piece of onion and one dry or fresh chile is all they need. Salt should always be added at last once the beans are cooked and are soft enough to absorb the salty flavor. They also love clay pots, slow cookers, cast iron pots, Dutch ovens, or any heavy pot that retains even heat and keeps them well snuggled.
As you can see once you have these four factors down it is extremely easy to make a great batch of beans. I always make a big pot of beans and freeze small batches. I can’t tell you enough how much of a life saver this is. Even if you forget to take them out of the freezer, It will take 10-15 minutes to defrost in a microwave or a conventional pot with a lid on. Frozen beans keep for up to four months. I make a batch every month and a half and it works great for the two of us.

Now let’s talk about what kind of beans to cook. For those who have not yet read our “about” page, Beans are my favorite grain and my ultimate last supper. Being from Mexico, beans are a huge part of our everyday diet. So, I am always looking for the ultimate bean, fresh and of good quality, that cooks evenly and has great flavor. I finally found it a few years ago when In the search for a bean that tasted like the ones home, I ran into Rancho Gordo. The first time I saw this brand was at wholefoods. Unfortunately they do not carry them any longer, but the good news is that you can buy them online. He is part of Seed Saver Exchange where he rescues and grows beans and grains of the Americas.
He is recuperating our American diet roots. From North America, Mexico, Central and South America. Me being Mexican, knowing any one with this kind of mission goes straight to my heart.

I hope you enjoy this recipe these Corona beans are a special type of bean, they are huge almost the size of a prune. In flavor they are buttery, potatoey and very starchy. These beans are easy to pair with any meal or a satisfying main dish for a meatless Monday. This bean does require the pre soaking overnight, it’s a must so plan ahead. Once they have been soaked, they cook more evenly and plump up.

A grilled cheese sandwich with a side of green salad, this is my love letter to the grilled cheese sandwich.
Sautéed Mushrooms, caramelized onions, and rich fragrant cheese in between two slices of toasted buttery bread; this is my kind of togetherness and solidarity. This is the one that hump day screams for. Let’s stick the whole week together with melted cheese plus mushrooms and onions and make our Wednesday memorable. After all it is certain that the small things in life give happiness and comfort. Wednesday Grilled Cheese Sandwiches like this have one mission , to turn any humpy or lumpy day into a little happy memory. Enjoy.

Wednesday Grilled Cheese Sandwich.

Makes 2 sandwiches

4 slices of artisanal, rustic bread
1/4 pound of Challerhocker Swiss cheese. (Gouda, Swiss, Emmental will work fantastic as well)
8-10 Cremini Mushrooms wiped with a damp clean towel and sliced. 
1 small medium yellow onion 1/4 “thick sliced
1 sprig of fresh thyme
1 teaspoon olive oil
2 tablespoons of butter for sauté
1/4 cup or 2 glugs of any leftover white wine. no white wine…chicken stock will work…
2-4 dashes of Sherry Vinegar.
Salt and Black Pepper to taste.

Manchego Butter Spread:

2 tablespoons of 1 year aged Manchego cheese, grated.
4 tablespoons butter softened

1. In a little bowl combine this two ingredients until you have a spreadable consistency.

What I love the most a bout this sandwich? the Manchego Butter Spread, once the sandwich hit the pan, this spread makes the most utterly croquant and buttery grilled cheese, you ever had… I suggest you can make any substitutions on the inside of the sandwich, but this spread is irreplaceable.

Preparation:

1. Over medium heat on a sautee pan add olive oil, 2 tablespoons of butter, sliced onions, salt pepper and a pinch of turbinado sugar. sweet the onions until translucent and they start to get some golden edges and color. At this point add the sliced mushrooms and sautee for about 3-4 minutes, until the mushrooms start to get some color too. about 6-7 minutes.
2. By now the bottom of your pan is starting to show some crusty brown bits. The onions and mushrooms are soft and golden brown caramelized color, Away fro the stove add two good splashes of white wine, and 2-4 dashes of the sherry vinegar, and a fresh sprig of thyme. Bring back the pan to the stove and wait until the liquids reduce. Set aside.

Wednesday-Grilled-cheese-sandwich-caramelized-onions-and-cremini-mushrooms 3. Evenly spread one side of each of the bread slices with the Manchego-butter spread.
4. On the no spread side, place a layer of thinly sliced or grated Challerhocker cheese, then a layer of the caramelized onions and mushrooms, and top with more cheese. Cover with the other bread lid, butter spread side up.

Wednesday-Grilled-Cheese-Sandwich_Yes,-more-please! 5. On a medium heat warm up a non-stick pan, cast iron pan or plancha. Once is hot, place both of your sandwiches and grill for about 4 minutes each side, until mahogany golden brown, and the cheese is melted.

7. Toss some baby spinach and salad greens with a bit of lemon juice, extra virgin olive oil, salt and pepper, serve your sandwich on the side.
