What are you going to raise a glass with this New Years Eve? Champagne? Well, that’s fine and well at midnight but for the duration of your evening we have something to share with you… A delicious Rosemary Paloma!
Try this very refreshing Mexican Classic cocktail made with grapefruit and lime juice, tequila, lots of ice, and sea salt. My spin a rosemary syrup that gives this Paloma a fragrant and festive flair.

Winter is the citrus season, and what better use than to add cheer and receive the New Year with some freshly squeezed grapefruit cocktails! They are calorie friendly and loaded with vitamin C…what a good omen to start your year!

Rosemary-Paloma_Ice-cubes

For the recipe you will need…

Rosemary Paloma

Makes 2 cocktails

3 oz Silver Tequila
2 cups freshly squeezed pink Grapefruit juice. I used local TEXAS Grapefruits
1 oz fresh lime juice
2 oz. Rosemary Agave Syrup*

For the Rosemary Syrup:

4/5″ sprigs of fresh rosemary
1/2 cup water
1/3 cup agave nectar
Place all ingredients in a small stainless steel pot, bring to a boil, boil for 5 minutes. Turn off and let cool off completely. remove the rosemary sprigs and transfer to a small glass jar.
Ice cubes

Garnish with:

Pink sea salt
Frozen grapefruit wedges
ice cubes with frozen rosemary: Remove the rosemary needles and add a few needles into each ice-cube tray a long with a dash of sea salt, pour cold over and freeze for at least 2 hours.

Preparation:

1. Prepare frozen grapefruit wedges and rosemary ice cubes at least 3-4 hours ahead,a day before works best, 1 1/2 hours the least!
2. With a piece of lime wet the rims of your glasses and dip them in sea salt. Set aside.
3. In a Shaker place some ice, the grapefruit juice, lime juice, rosemary syrup, and Tequila. Give it a good shake-arooh hard for 30 seconds. Place some ice cubes on the glasses, and a frozen grapefruit wedge. Pour 3/4 of the glass and add a good 2 oz of Sparkling soda.
